Sounds pretty good, maybe a GTX 280 instead of the 9800GX2?

Benchmarks on some sites, namely the one featuring the '4850 and the 4870' on this site, show that the 9800x2 is better and achieves higher fps than the 280.

get a new Quad core. Dont go for expensive as you can allways overclock to beat the expensive stuff

2 sets of G.Skill PQ pc-8000 ram (8GB overall)

a good mobo that can handle all that

and 2x 4870's in Crossfire... why? they are just Better and crossfire scales better then SLI

Will make you happy and leave you enough for some nice big 24-28" LCD

I agree with most of what has been said, but I'd say go with an nVidia card because:

* PureVideo (nVidia's h.264 acceleration in hardware) is more widely supported than ATi's version, AVIVO

* CUDA support for GPGPU (using GPU for general processing) is just about to take off and be supported in Video Editing applications, potentially increasing performance by up to 18 times... this will bring encoding times down dramatically
