Which version should i learn, mostly for work when i start needing to know it more, RedHat 6.2 s what we use now, but i heard that most places use SUSE, are the too close to worry about it or what, im very new to linux, just know some basics like installing and configuring the IP address and hosts file and stuff. Any help or sites or good book recommendations is apprecitated.

Red Hat is mostly used in all linux server enviroments. I got OCC running on red hat actually :) I'd get a copy of red hat 8.0 and give it a whirl, if you're really wanting to learn. If you're looking for a linux desktop distro then mandrake might be better for you. I haven't played enough with SuSe to recommend it or not recommend it.

Can you still use all the same desktop enivronments on redhat like KDE and gnome on redhat?

KDE is just a manager for the X Window system... anything running X, Linux/Unix/MacOS can run KDE, Gnome, Enlightenmint, etc...

KDE/Gnome, etc is not distro specific, nor is it controlled by a distro.
