For some games, no. A few games are designed with multimonitors in mind and fix the FOV so you don't have the "fish-eye" effect. I know if Battlefield BC2 you can change your FOV settings to remove this effect, but other games won't allow you to change this. widescreengamingforums.com has a good list of supported eyefinity games, and a list of games that can be tweaked to fix the effect.
