I actually have seen stability issues with VLC on my machines (I think it was version 1.0.4 or 1.0.3 that crashed every time I tried to use it, but not the current version) and I have also see differences in playback quality between the two. I barely listen to music or watch anything on my computers, so I don't use them that much anyway. I also use Songbird, but again, not too much.
