update im going to go with a SILVERSTONE ST1000 PSU but im not sure if i should go with two HD-487A-ZDDC - 1GB XFX HD 4870 XXX, PCI-E 2.0 (x16), 3800MHz's or with a single 2GB Gainward Rampage700 GS GLH, PCI-E 2.0, 3800MHz

get ONE 260 gtx or ONE 4870 1GB (not the XFX because they're overpriced).

also you don't need ANY more than 750W your computer. 600W would even be fine, you don't need SLI/Crossfire, you might as well burn your money now!
