To obtain the blur (depth of field), use a longer focal length and get your target (i.e., 300mm and stand back) and to reduce blur, use a shorter length, like 35mm etc. Very weak analogy, but it works.

 

I like using a 50mm f2.8 prime lens for 'portrait' style shots :)
