After watching it a few times I noticed that the pilot straightened out the plane before having set down the main gear; so the plane was still going fast enough for the wind to create significantly more lift on the right wing, forcing it over. The proper technique is to come in just over the stall speed and after setting down the main gear the speed drops to below the stall speed, allowing the plane to be safely straightened out wrt the runway.

This kind of an occurrence is more expectable on an A320 than say a 747 for 2 main reasons; 1) the pilot's start out on smaller aircraft and step up to the larger ones as they get more experience and 2) lighter aircraft a more susceptible to adverse effects of winds, turbulence, etc.
