Im currently using 3 1080p monitors in portrait mode that gives me a resolution of 3240x1920 is this really considered 2k or better? because Im considering just going with a 32' monitor with a resolution of 2560 x 1440. so what Im really wondering is... will 3 1080p moitors give u true 2k resolution or do I need to go for the 32' option?

I think 5760x3240 (aka 3x 1080) is 6K. That will not run very well with any  single card max settings lol. maybe 2x Titan XPs. A single 1070 won't unless you play games at lower settings.

 

I know Nvidia has some scaling software that will upscale or downscale when you setup an array. But than really you are just playing say 2k across three screens.

3240x1920 is  what im presently using i adjust quality setting on a per game basis generally i have no issues with fps..but fps aside i still want to know will i get better imagine quality on a 32' monitor with a native resolution of 2560x1440p as opposed to what im using now? still not sure if a triple monitor setup with resolution of 3240x1920 is a true 2k resolution or not

Sorry I don't know what I was thinking. 3x 1080 is 5760x1080 (6.2MP) lol So its around 3k~. 3240x1920 is also 6.2MP so they should preform the same.

 

Its hard to answer the quality question because everyone has a different level of "quality" . Technically 3240x1920 is a higher resolution so that will render a higher quality picture. But this where "Quality" comes into play. a cheap 32" 4k TV from Walmart will not look better than a nice 2k PC gaming monitor.
